Kometo comes from the Japanese “kome to”, which means “rice and”.
Rice comes first here. The “and” is everything we serve with it: the fillings, the sandos, the karaage, the bento and the matcha.
It started on a trip to Japan. Jet-lagged at six in the morning, we walked into a convenience store and walked out with a salmon onigiri, an egg sando and a hot coffee, all for the price of a snack back home. It was fast, it was cheap, and it was better than most breakfasts we had ever sat down for.
What stayed with us was not one dish. It was the idea that quick food could still be made with care. Back home we could not find it anywhere, so we started pressing onigiri in our own kitchen, and friends kept asking for more.
Kometo is our version of those shelves: a small menu, familiar food, ready when you are. We are bringing that everyday convenience to Buffalo first, with more to come.
